2. OKRO SOUP
Our next weekend favorite is Okra soup. Okra is a popular vegetable eaten in many African countries, the Caribbeans and other parts of the world. West and Central Africans love to eat their okra in the form of soup, popularly referred to as okra soup, whereby the okra is chopped into smaller chunks (and sometimes blended to give it a very slimy effect).
It is usually cooked with various meats, dry fish and spiced with salt, maggi, crayfish, habenero pepper, and some people may add some chopped spinach and/or ground egusi to give the give a thicker consistency. Okro soup is popularly eaten with garri, water fufu, and pounded yam. Okra soup is also very delicious with Jasmine rice. However, depending on health and dietary restrictions and preference, it can be eaten with almost anything.
