3. BEEF PEPPER SOUP
Try beef soup or beef pepper soup the African way! Cameroonians might argue that the beef pepper soup in the photo is not the typical pepper soup , as it looks brown and has a lot of oil in it. However, is there a real definition of pepper soup? As long as it is soup made from beef (or chicken) broth, very well spiced and spicy, then in m y books, it is pepper soup.
Beef pepper soup would typically be made with a variety or a single type of beef such as goat meat, beef, and it can be complimented with tripe, and yes you use oxtail. Pepper soup in general can be made by using the broth from boiled meats and/or chicken. For it to have that peppery (spicy)taste, hence, pepper soup, you need to spice it up with habanero pepper.
Pepper soup usually gets is delicious flavor by adding maggi, salt and blended (green onions, ginger, garlic), and to top it off, you can add an African spice used in Cameroon called njangsang or improvise bgy using other African spices popular in your country.
Pepper soup is always a winner on a cold day or rainy day or whenh you have a cold. Rice or plantain can be eaten with it if you need something heavier.
